Grilled Panko-Crusted Salmon

We made this for Thanksgiving this year in place of a turkey. I have to say, we did not miss the turkey one bit with this recipe and it’s become our new favorite way to make salmon.

We made 3.5 lbs. of salmon, but I’ve adjusted the recipe here for 1 lb.

You will need:

2 tbsp. panko

2 tbsp. breadcrumbs (I used garlic & herb, but any kind is fine)

1 tsp. garlic powder

1/4 tsp. paprika

1 tsp. stone ground mustard

1 lime

1 lb. of salmon

What to do:

In a small bowl, mix together the panko, breadcrumbs, garlic powder, and paprika.

Spread mustard on the salmon and sprinkle the dry mixture on top. Add lime slices to the top of the salmon.

Grill on low heat or cook in the oven at 250º for 40 minutes or until the internal temperature reads 140º.

This salmon goes great with potatoes and asparagus. We did asparagus grilled and tossed with the same panko crusting used for the salmon.

The salmon is a savory dish that somehow goes well with the flavors in a Thanksgiving meal. Be warned, though, the salmon is fairly rich.
